Rezumat

Kinetic analyses of limited and one-by-one proteolyses of ginnacin, the storage 11S globulin from Ginkgo biloba seeds, reveals two successive steps of the reaction. At the first step, limited proteolysis occurs consisting of removal of a group of the a-chain a-helices. The massive degradation of ginnacin by the one-by-one mechanism starts at the second step, only. As shown previously, soybean and pumpkin 11S globulins are protected against premature deep proteolytic degradation in a similar way. It is suggested that such a regulatory role of the limited proteolysis appeared at early stages of the evolution of 11S seed storage globulins.
