Rezumat

The article contains the results of the study (2013-2016) on the level of the formation of the main elements of grain quality - protein and gluten of winter wheat varieties of Poltava breeding in a time of sowing special experiment. The task of the experiment was to determine how the quality of grain is formed in varieties of Poltava breeding in comparison with a wide range of varieties and breeding lines. As a result of the research, it has been established that, among a wide range of varieties and breeding lines, varieties of Poltava breeding form an average or increased content of protein and gluten. The main conclusions are made: it is recommended to use the varieties of winter wheat of Poltava breeding as a promising breeding material and as parents in hybridization for obtaining high-quality varieties.
