Method for the determination of fructose and sucrose in extracts of vegetable and other products, based on the reaction of these sugars with resorcinol in the presence of concentrated phosphoric acid. The method is simple and non-toxic, it allows to quantitatively determine these sugars in the presence of glucose and other sugars, which do not have the ketone group in the open chain of the molecule. |
