Rezumat

The analysis of the possibilities for the lactose isomerization into lactulose and of mechanisms for its realization has been performed. The optimization of the electrophysical method to increase the obtained inverted end-product quantity is presented. The role of the amino-acid content and the nitrogen compounds in the course of the transformation and the quantitative composition of the carbohydrates are described. The electrophysical characteristics and lactose isomerization degree are defined at two processing stages.
