There had been studied the slaughter yield and carcass composition in broiler chickens of cross Ross 308 depending on their body weight at slaughtering. The analyzed data were received after the slaughter of twelve groups of broiler chickens. The results showed that broiler chicken’s body weight has a positive correlation with their carcass weight after slaughtering. The chickens having the body weight of 2.2kg, 2.23 kg, 2.40 kg and 2.53 kg recorded respectively carcasses with the weight of 1.8 kg, 1.9 kg, 2.0 kg and 2.1 kg. After carcass cutting it was proved that the maximum weight of breast meat was received from broiler chickens with body weight of 2.53 kg that had been classified in the category of carcass weight of 2.1 kg. The maximal quantity of chicken tight was received from broiler chickens with body weight of 2.40 kg and their carcasses had the weight of 2.0 kg. The fat quantity did not vary much depending on carcass categories, excepting the carcasses with the weight of 2.0 kg
that recorded the highest fat quantity of 0.2 %. The weight of internal organs obtained from slaughtered broiler chickens of different body weight did not differ essentially. |

Datele analizate au fost obţinute în urma sacrificării a douăsprezece loturi de pui. Analiza rezultatelor a demonstrat că masa corporală a puilor corelează pozitiv cu greutatea carcaselor. De la puii cu masa corporală de: 2,2kg, 2,23 kg, 2,40 kg şi 2,53 kg au fost obţinute carcase cu greutatee de 1,8 kg, 1,9 kg, 2,0 kg şi respectiv 2,1 kg. Rezultatele tranşării carcaselor au demonstrat că greutatea maximă de piept a fost obţinută în urma sacrificării puilor cu masa corporală de 2,53 kg, care au fost clasificaţi la categoria de carcase cu greutatea de 2,1 kg. Cantitatea maximă de şold s-a obţinut de la puii care au avut masa corporală de 2,40 kg, iar carcasele au avut greutate de 2,0 kg. Cantitatea de grăsime nu a variat esenţial în funcţie de categoria de carcase, cu excepţia carcaselor din categoria de greutate de 2,0 kg, la care grăsimea obţinută a constituit în mediu 0,2%. Masa organelor interne obţinute de la puii sacrificaţi de diferite greutăti nu s-a deosebit esenţial.</description> </descriptions> <formats> <format>application/pdf</format> </formats> </resource>
