This paper contains two methods of tracing the falsifying chocolate by substituting the cocoa butter, using substitution fats, cow fats and solidified palm fats. The determinations consist of extracting fat from the samples to be analysed and determining the index of saponification and the index of iodine. Depending on the value obtained for these indexes we settle the degree of falsifying of the samples. |
