Rezumat

The results of chemical analysis of processed cheese of different brands are presented in this work. Processed cheese is one of the most consumed foods in Russia. According to research results, approximately 75 % of Russians consume processed cheese at least once in three months, and about 65 % of Russians consume it at least once per week. Despite the fact that this product is in high demand, currently there is no guidance document for processed cheese production in Russia. Based on the above, the study of processed cheese quality indicators represents a crucial task. The research aims are: 1. assessment of the compliance of the quality of processed cheese test samples for a number of organoleptic characteristics and physical and chemical parameters with regulatory requirements; 2. evaluation of individual risk when using this type of product. The following products were selected for research: "Dubrava" by JSC Yuzhsky Dairy Plant, Yuzha; "Friendship" by JSC RZPS, Ryazan; "Merry Milkman" by Wimm-Bill-Dann, Moscow; "Hochland" by LLC Hochland Russland, Moscow region; "Yantar" by JSC Moscow factory of processed cheese Karat, Moscow; "President" by LLC Lactalis Istra, Moscow region. The following quality indicators were analyzed during research to assess the compliance with GOST R 52685-2006 General Specifications: organoleptic characteristics, physical and chemical parameters, content of sodium chloride (table salt), heavy metal content (Pb2+, Cd2+,Cu2+, Zn2+, Fe3+, Mn2+, Ni2+, Cr3+, K+, Na+), content of trace amounts of pesticides. The results of the analysis show that all the samples meet regulatory requirements. The obtained values of the individual risk (LR) during the consummation of the product can be considered as relatively low. It is suggested this approach in the calculation of risk values used to determine the most safe products for conformity confirmation.
