Natural antinutritive and toxic factors in foodstuffs
Natural anti-nutritional and toxic substances are widespread in different foods. They are represented by a broad spectrum of compounds as phytic acid, oxalic acid, solanine, inhibitors of various enzymes and others. Consumed in excess the mentioned substances may significantly affect the human organism by reducing the nutritional value of food, inducing or aggravating of some pathological situations. There are elucidated also some opportunities to reduce or even to exclude the negative effect of these substances. |
