Rezumat

The investigations were based on determining the presents and diversity of bacterial microflora of chicken carcasses in the trading period. As a result it was determined that the variation of microflora is composed from cultures that are part of digestive tract in chickens (Streptococus, bifid bacteria, E. coli, and others) intestinal microflora of chickens. The microbial flora of poultry carcasses is correlated with the degree of compliance veterinary hygienic of slaughterhouses, sale halls and the objects that come into contact with carcasses. More frequently carcass has contaminated with bacterial flora of external provenience and occurs carcasses immediately after slaughter of birds (in the process of maturation of meat) or during transportation and marketing. Microbiological investigations have shown that of the surface of the carcasses prevalence microbial flora consists primarily of E. coli and Streptococcus, being more consistent in samples taken from the surface of carcasses, which has the resistance for many antibiotics. The inhibition to the antibiotics has variations of 2 mm to 10 mm in particular to Cefazolin and florfinecol
