Rezumat | ||||||
As a result of the researches, it was found that the fruits of the autumn variety Vistovocinaia and winter variety Noiabrscaia during the storage period had the diminution of the content of the phenolic substances. The activity of peroxidase and polyphenoloxidase in the fruits of the investigated pear varieties has changed depending on the genotype, the vital processes that took place in the fruits during storage and depending on the methods of keeping the fruits. The storage method has had a decisive influence on the change in activity of these enzymes. Keeping the pears in a controlled atmosphere, applying the ethylene synthesis inhibitor Fitomag to the freezing cell atmosphere was more beneficial to preserving fruit quality than keeping them in the usual atmosphere. |
