This paper summarizes the research data of various bibliographic resources in order to identify the sources of accumulation of harmful chemicals in foodstuffs, their degree of toxicity to the human body, as well as the selection of methods for minimizing the negative actions corresponding to them. The use of pure foods is impossible, but it is possible to act in the part of minimizing the concentration of toxic substances at different stages of processing. |
