Spices are some small ingredients, easy to overlooked but there importance in kitchen and for people is much higher than their sizes.In spices was find a semnificative quantity of vitamine ( B, C ), mineral salts (Fe, Ca) and another nutrience, carotene that stimulate olfactory organs, activity taste organs, digestive organs, causes apetite, improve nutries assimilation and affect favorable exchange of them [2]. The purpose of scientific research was evaluation of spices quality that is comercialized in network stores Green Hills and Linella from Chisinau city. To determine quality of analized spices in this work we use standardes methods for so indices as: humidity, the content of empty black pepper, the content of metalic impurities, organoleptic methods and the non-standard methods ( analysis of microscopic). [1] Comparing the net mass indicated on the package and the real one, we found deviation in 6 products of 8 analyzed. [5]. |
