In the manufacture of tomato-based products, it is obtained about 10-35% of tomato waste from the total quantity of processed raw material. Th ese wastes could be used to obtain liposoluble extracts by the supercritical CO2 extraction method. As a result of the extraction process, in addition to CO2 extracts, it is obtained more than 85% of degreased CO2-meal. Th e CO2-meal from tomato waste, rich in fi ber, can be valorised by its use in the producing of bakery products, replacing some of the high quality wheat fl our. |
