Rezumat

In this paper, dried fruits were considered as part of healthy nutrition; the information for glycemic index values and dried fruits composition with respect to their classification as a source of dietary fibres and micronutrients was presented. Also it was presented a wide range of dried fruits assortment regulated by National and European quality standards as well as products derived from dried fruits with high level of processing.
