The commercial and consumer value of dried tomatoes, based on their sensory, nutritious and antioxidant properties, as well as on their convenience of use have been widely covered in
this work. Trends of actual research in the field of tomato drying have been shown. The expediency of tomato drying in the Republic of Moldova has been given reason. Succinct results of the elaborations that were developed at the Institute of Research and Development for Horticulture and Food Technologies are presented. |
