Rezumat

The paper presents a modern assortment of dehydrated food products from fruits, vegetables, berries, and innovative methods of their production, developed at the Scientific and Practical Institute for Horticulture, Viticulture and Food Technologies. This assortment is based on local raw materials, it does not provide for the use of colors, flavors and preservatives, and includes various kinds of fruit bars, plates, sweetened fruits and dried ready to eat fruits, as well as non-traditional dried vegetables.
