Rezumat

The article is approaching the stages of development of the hospitality industry from the ancient to the present times which was identified in Moldavia and International trends. It is conducted an analysis of the catering market services regarding the amount and types of units, which established that the market for restaurant services in Chisinau is varied, but not saturated: to 1000 inhabitants there are 17 available seats, while the norm is 40. In the same time the existing businesses are lacking of customers due to: depreciation of the national currency, decrease in standard of living, diminution in demographic, political and economical coefficients. The above mentioned reasons led the Moldavian to be inhabitants to spend less money for food services, practicing to dine at home, which drive the alimentation market to shrink the amount of luxury restaurants and move to cheaper and simplified menus.
