Rezumat

Meat, being a product of animal origin, retains its qualitative characteristics as long as its main nutritional components, such as proteins, carbohydrates and lipids without suffering biochemical changes. The most common method of assessing the freshness of meat is sensory analysis, but often this assessment may be subjective because consumers don΄t have competent knowledge of the raw material or may be influenced by previous knowledge and opinions. The visible characteristics of the product, such as color, surface moisture, texture and smell are usually used as the first indicators for the freshness of the meat. However, Ciobanu and Boișteanu, 2020 mention that the analysis methods that have analytical properties such as accuracy, precision, sensitivity and selectivity, determine quantitative and qualitative results in order to improve the quality of meat products analysis. Through classical laboratory examinations, such as the determination of pH, peroxide index, peroxidase, moisture and dry matter, protein and fat, a precise assessment of the freshness of the meat and the degree of its deterioration can be made.
