Food safety is an activity which ensure and indicator which reflects consumer welfare. In this activity are involved all economic branches that ensure the production, processing, storage, transport and distribution of food. The certain dangers are hiding in food nature diversity, technological processes used, supplements used in the manufacturing process, used materials that come into contact with foodstuffs, as well as the duration and conditions of storage of foodstuffs. For this reason the safety requirements must be maintained on all technological chain: from field/farm to consumer table. The aim of this communication is to describe briefly the factors which determine food safety and to review measures that can ensure their safety. |
