An analytical dependence of the duration of the process of bilateral roasting of beef with high connective tissue of the force of compression are proposed and experimentally verified in the article. A theoretical model of the process of roasting of meat with high connective tissue by placing the meat products in a functionally closed containers and compressing them with a certain force between two surfaces of the heating apparatus is developed. |
