The expediency of use composition of mixes is established on the basis of secondary raw resources of food manufactures in quality prescription of a component at manufacturing wheaten bread. The character of the influence of dosage of mixes on properties of the wheaten dough, chemical structure and quality of ready bread is revealed. |
