Pairing wine with food has become in recent years an important research area, applied both in the medical and food industry. Food was focused on the experiences gastronomies consumer healthcare industry instead concentrated on analyzing the beneficial effects of wine, food, and the synergistic effect of both on health. Numerous studies have shown that adopting a healthy lifestyle, supplemented with foods rich in protein, fiber, probiotics, unsaturated and polyunsaturated fatty acids, but also a moderate consumption of red wine can prevent or reduce various conditions such as cardiovascular disease, venous thrombosis, obesity, gastrointestinal disorders, neurodegenerative diseases such as Alzheimer’s. Beneficial effects on health are derived from the rich complex of biologically active compounds of wine associated with that of food. Because red wines have antioxidant and antibacterial effect, that can prevent food poisoning, and food in turn increases the rate of metabolism and contributes to the faster elimination of ethanol from the blood. Moderate amounts of red wine have been found to alleviate oxidative stress and vascular endothelial damage induced by a meal rich in trans saturated fats. |
