Rezumat

The integral food products, especially those of poultry origin, have played a key role in human life and have had a major influence on health status. Compared to other sectors of animal husbandry, poultry farming was imposed very difficult as an important branch of animal products. Over time, domestic birds were raised only in small flocks and in an empirical way, without any scientific concerns regarding nutrition, shelter and rational maintenance. Meanwhile, poultry production has grown rapidly, which makes poultry meat and eggs constantly available on the market in large quantities and at low prices compared to other animal products. Improving the quantity and quality of animal products is impossible without the use of modern nutrition and feeding based on scientific principles. Currently it is indispensable the use of feed additives, a group of chemical and biological substances that, added to food, meet certain specific requirements, stimulate the growth rate or production of animals, or ensure a good conversion of food. During his phylogenetic evolution, man permanently changed the relationship with food, each civilization had a special type and way of nourishment, so we can say about feeding that it is a complex process that was formed and improved during evolution through continuous adaptation of production, processing and metabolizing food systems under existing environmental conditions. Food has always played a key role in human life, its quality and defects decisively influence health state, and the food market is growing at a rapid pace. Specialists expect that at world level, animal products market will reach maximal levels. The poultry product is a precious food for man and an indispensable raw material for food industry. An important protein source, as well as other nutritive substances, poultry and eggs, when consumed rationally, represents a real stimulant for organisms’ metabolic functions, leading to increased resistance to disease and helping to strengthen the nervous system. Industrial progress of food technologies suppose in many cases, obtaining of refined products, very concentrated in energy but poor in active biological substances. Such products are the ones that produce imbalances, because they treats with priority the sensorial function, neglect the nutritional one and last but not least ignore the protective function. The result has been the apparition and evolution of some nutritional diseases like cancer, diabetes, and cardiovascular disease. Therefore, there was a need for foods that contain active substances with beneficial effects on both human and bird health. Various raw material and foodstuff products are easily altered, which considerably reduces their storage period. Prolongation of food storage period is necessary to eliminate the seasonal nature of consumption, increase the availability for consumer and reduce the loss of perishable foodstuff products, by using of some preservation procedures for maintaining their quality. Poultry products are an excellent source of vitamins and minerals, especially of assimilable phosphorus and iron, and are easily digestible. At the same time, poultry and eggs are an ideal source of essential amino acids and a combination of vitamins and minerals that couldn’t be founded in any other food. Vitamins from poultry products allow satisfying the requirements of human, depending on nutritional conditions that birds benefited. Thus, considering the composition of food, as a material support of life, the nutrition just makes deeper the fundamental links between man and food.
