În lucrare sunt prezentate rezultatele studiului deferitor procedee tehnologice de fabricare a vinurilor roșii seci asupra conținutului de substanțe biologic active. A fost demonstrat că în procesul de maturare a strugurilor soiurilor roșii are loc creșterea concentrațiilor de substanțe biologic active în vinurile roșii seci. Creșterea duratei de fermentare-macerare în procesul tehnologic de fabricare a vinurilor roșii seci contribuie la sporirea conținutului de proantocianidine. |
