Rezumat

The ability to produce exopolysaccharides by autochthonous Streptococcus thermophilus strains isolated from raw milk and spontaneous fermented dairy products from different regions of Republic of Moldova. The influence of the fermentation conditions such as temperature and carbon sources on the production of exopolymers by the selected strains of Streptococcus thermophilus were studied. Five strains were characterized by high milk fermentation speed. During this research work were identified only two exopolysaccharides producing strains in suficient quantity to improve the reological properties of fermented milk.
