Malolactic fermentation use in the manufacture of young red wines. Study of innovative technologies for the production of young wines, especially reds table, involves analysis of important factors such as: the concentration of tannins in wines and methods of removing them; diff erent strains of malolactic bacteria used for organic de-acidifi cation of red wines, infl uence of temperature on malolactic fermentation; treating pulp with diff erent pectolytic enzymes. |
