The study of biogenic amines, contained in Moldavian wines, has shown the presence of 4 biogenic amines: histamine (HIS), tiramine (TYR), putrescine (PUT) and cadaverine (CAD). The total content is varies within a rather large: from 1,6 up to 28,8 mg/dm3. But this amount prevails tyramine (TYR) and putrescine (PUT). Histamine (HIS), contained from trace amounts up to 1,6 mg/dm3, has not exceeded the established norms in the EU. Сadaverine (CAD) in most samples investigated samples has been detected at trace levels. |
