This article includes the results regarding the infl uence of climatic factors of grapes cultivation on yield, accumulation of sugars and acids, as well as on the physicochemical parameters and stability of white dry wine materials Chardonnay. It was established that the sum of active temperatures aff ects the technological maturity and the beginning of harvesting of grapes. Moreover, one of the decisive climatic factors is the absolute minimum temperature, which determines the development of the grape culture and its yield. |
