Problem of using raw material wines produced from new selection varieties for sparkling wine remain actual in relation to the increased demand for high-quality sparkling wines, expanding the assortment and increase the volume of these wines on the market. Along these wines have not only a lower prime cost of production, but also a high potential for promotion as totally local products on international markets. Important quality particularities of raw material wines for sparkling wines production are foaming proprieties, also this indices is one of most important at appreciation of finished sparkling wines. Identification of this parameter is especially important for raw material white wines, which can provide preventive data of potential using of new selection varieties for sparkling wines production. |
