Rezumat

Was carried out the search and evaluation of new autochthonous strains of lactic acid bacteria with the industrial potential and ability to produce exopolysaccharides (EPS). Were isolated and selected the strains of Streptococcus thermophilus from dairy products of spontaneous fermentation. The ability to produce EPS was tested by sensorial methods and of the ethanol precipitation. The strains are characterized by high speed of milk fermentation and properties to produce EPS. Strains were applied in starter cultures composition which destinated for yogurt production, contributing on the formation of a texture consistent of a product with optimal viscosity.
