Rezumat

In the present scientific communication is related about the integral exploitation of the grape seeds – secondary products of the wine industry. In the process of the exploitation of the grapes with the aim of obtaining of the juices and wines is obtaining around 20% of the grape seeds, which contain quantities up to 20% of oil and 15% of the tannins. These products can be used in diverse industries as food, cosmetics, pharmaceutics etc. The scientific research realised by the researches from the Institute of Chemistry of ASM and from the State University of Medicine and Pharmacy” Nicolae Testemitanu” in the last 10 years has put into evidence results that concerns the quantity and the quality of the vegetal oils and of the obtained tannins from the grape seeds. It has been elaborated processes of enotannins oxidation. As a result of realisation of this process is obtaining a new product that was named Enoxil. The analysis of the mass and FT-IR spectres measured at the MALDI spectrometer Bruker Daltonix flex Analysis of the compound Enoxil allows to conclude that in the process of enotannins oxidation is taken place the depolimerisation of the catechins and/or epicatechins oligomers with the formation of the monomeric and dimeric structures mentioned above. In the communication are presented also the results of the research that concern the antioxidant, antifungal and antibacterial properties of the Enoxil compound. The results of the scientific research realised in the State University of Medicine and Pharmacy „Nicolae Testemitanu” reveal the fact the Enoxil compound is non toxic, has increased antimicrobial and antioxidant properties. It was established that the compound Enoxil can be recommended for the treating of the diseases provoked by fungus and bacteria.
