To be profitable and to survive, the food companies seek to introduction of new products. New product development is extremely important for continued growth of a food company. The product development process has a structure which remains the same, the activities within the structure depend on the knowledge, the resources and the organization of the company, as well as the company philosophy, business strategy and attitude to risk-taking. The new product development is fluid and loosely structured so that changes can be made. A new product evolves over a sequence of stages, beginning with an initial product concept or idea that is evaluated, developed, tested and launched on the market. Between these stages there are critical points where top management evaluate the project of new food development and give go/no-go decisions. This paper was designed to provide up-to-date relevant information on the stages of new food product development. The scientific information presented here could help food scientists in new food development, and food companies that are constantly searching for ways to revitalize, restructure and redesign their new food development processes for better results. |
