In this article are presented results of investigations of efficacy of various procedures of destruction of the cell wall in order to obtain maximum amounts of carbohydrates from the biomass
of sedimentary wine yeasts. Are presented results of comparing of different methods of fractionation of carbohydrates in yeast biomass and studying of composition of obtained fractions.
