There have been described the hygienic conditions on the Chişinău – city’s food – stuffs markets during a period of 5 years(2003 – 2007).The most frequent and grave infringements of sanitary rules were the activity of different objectives without permission of sanitary authority, the absence of documents about the quality and origin of food – stuffs, the absence of hygienic certificates. There have been analyzed the results of laboratory investigations of food – stuffs’ samples that had been collected in markets. Generally, the part of food – stuffs samples, that didn’t correspond to hygienic norms was in the range of 3,54 – 9,2% with the average of 6,25% during the whole period of time. There were proposed the measures to improve the situation.
