Sunt descrise caracterele fenotipice şi compoziţia biochimică a tulpinilor de drojdie
Saccharomyces cerevisiae CNMN-Y-20 şi Saccharomyces cerevisiae CNMN-Y-21.
Prezenţa în componenţa drojdiilor a complexului de substanţe de natură proteică,
bogat în aminoacizi esenţiali şi cu activitate înaltă a enzimelor antioxidante, precum şi
a carbohiraţilor, preponderent al β-glucanilor, permite a recomanda aceste tulpini spre
utilizare în biotehnologie. Rezultatele sunt importante în descrierea standard a speciilor
propuse ca obiect de valoare industrială. |

Наличие в составе дрожжей комплекса веществ белковой природы с высоким содержанием незаменимых аминокислот и ферментов антиоксидантного действия, а также полисахаридов, с преобладанием β - глюканов, позволяет рекомендовать изученные штаммы для применения в биотехнологии. Результаты представляют интерес для стандартного описания видов дрожжей предложенных в качестве объекта индустриального назначения.</cfAbstr> <cfAbstr cfLangCode='RO' cfTrans='o'>Phenotypical signs and biochemical composition of Saccharomyces cerevisiae CNMN-Y- 20 and Saccharomyces cerevisiae CNMN-Y-21 yeast strains are described in this article. The presence of protein complexes with high content of indispensable amino acids and antioxidant enzymes, as well as polysaccharides with predominance of β-glucanes allow us to recommend these yeast strains for the utilization in biotechnology.
