The results of the study on the composition of rabbit meat are presented with the aim of diversifying the assortment of meat products for small children (from 7 months). It was found that rabbit meat is an important source of protein up to 20,61g/100g product, with a low fat content – 2,95g/100g product. It is noted that rabbit meat satisfies more than 50% of the daily intake of animal protein, which makes it possible to attribute rabbit meat products to functional products without adding additional raw materials, being also a beneficial food in the growth and development of children small. |
