Rezumat

T he tartaric acid is a product with multiple utilization in various branches of the food, pharmaceutical, chemical, textile industry, etc. Industrially, thid chemical compound is obtained from tartar, but tliere may be used other secondary roducts as well, namely all types of wine yeast. In order to obtain a maximum output of tartaric acid it is required that all tartaric compounds present in the raw material be changed from insoluble state into the soluble one in the aqueous phase. There was studied the influence of several physical and chemical parameters upon the tartar dissolution process and it was stated that the most important are considered the time, the temperature and the fluctuating ratio between the solvent and the mass subjected to dissolution.
