The purpose of the work is to conduct a comparative assessment of the chemical composition and biological value of sheep milk of the breeds of different productivity directions, in particular Askanian Karakul, Ukrainian Carpathian mountain breed and Prekos. It was found that the milk of sheep of the Askanian Karakul breed contains less total protein, fat, dry matter and has a lower calorie content compared to the milk of Ukrainian Carpathian mountain breed, however, in terms of protein and lipid composition, it is the best due to its higher content of κ - casein, triacylglycerols, partly phospholipids, and a lower content of cholesterol components. The milk of Carpathian mountain sheep is characterized by the highest content of dry matter and calories due to the high content of total protein and fat. The sheep milk of the Prekos breed is characterized by a low content of all indicators of the chemical composition, with the exception of the highest content of lactose. The milk of this breed also contains high levels of non-esterified and esterified cholesterol. However, in terms of protein composition, it is almost not inferior to the milk of the Karakul sheep, and in terms of the content of γ and κ – casein, it is even better balanced than the milk of sheep of the Ukrainian Carpathian mountain breed. |
