Rezumat

Juices extracted from fruits and berries are the most indicated antioxidant foods, because they provide cells and tissues with all the nutrients which are necessary for the vital activity of the human body. Antioxidant foods help reduce oxidative stress, neutralize free radicals and protect the body from their action. The anticancer properties of juices as antioxidant foods are related to the precious content of antioxidants. In this research paper are represented the results of spectrophotometric research on the content of antioxidant substances: anthocyanins, flavonoids, vitamin C, total polyphenols, the Folin-Ciocalteu index and the valorization of the antioxidant activity of some fruit and berry juices.

Sucurile extrase din fructes, i pomus, oare sunt cele mai indicate produse alimentare antioxidante, deoarece furnizeaza celulelors, it, esuturilor toate elementele nutritive necesare activitat,ii vitale a organismului uman. Alimentele antioxidante contribuie la reducerea stresului oxidativ, la neutralizarea radicalilor liberi s, i protejeaza organismul de act,iunea lor. Proprietat,ile anticancirogene ale sucurilor ca alimente antioxidante sunt legate exact de cont,inutul pret,ios al antioxidant,ilor. În articol sunt prezentate rezultatele cercetarii spectrofotometrice a cont,inutului de substant,e antioxidante: antociane, flavonoide, vitamina C, polifenolii totali, indicele Folin-Ciocalteus, i valorificarea activitat,ii antioxidante a unor sucuri de fructes, i pomus, oare.
