In recent decades special attention has been paid to the scientific research into the use of industrial by-products obtained in great quantities from the brewing and wine-making processes. One area of major interest is the use of yeast waste to produce biologically active substances. An important component of the yeast cell wall structure is mannoproteins. The manoproteins due to their specific composition, play an important role in maintaining cellular integrity, catalyze various biochemical reactions in the body, participate in the body's immune and autoimmune response. This makes them potentially perspective for application in the animal husbandry, food industry, pharmaceuticals, cosmetology, medicine, winemaking, and agriculture. But the production of mannoproteins is often limited by the rigidity of the yeast cell wall, requiring efficient extraction methods. At present, the extraction processes include enzymes, nanoparticles, ultrasound, and mechanical destruction, used either separately or in combination, but these are quite expensive and require special equipment. Thus, the purpose of this work was to look for more efficient methods of extracting mannoproteins from the yeast sediments. The research material was the yeast biomass (Saccharomyces cerevisiae) of the lower fermentation from beer production, kindly provided by the Kellers brewery (Budesti). For the efficiency of the methods of extracting the mannoproteins from the yeast cell walls, the autolysis conditions were optimized. The autolysis options using the acetic acid and the sodium phosphate buffer were studied. The suspensions were thermostated at +37° C and + 45° C for 8 hours. The mannoproteins were extracted from the biomass of the yeast strain Saccharomyces cerevisiae CNMN-Y-18 cultivated with the TiO2 nanoparticles in the concentration of 10 mg/L, at the temperature of + 25°C for 120 hours [1].
