În articol sunt prezentate date privind compoziţia biochimică a levurilor din deşeurile industriei de bere, restante după diferite cicluri de fermentare. S-a stabilit, că biomasa de levuri are o compoziţie biochimică variată şi conţine (în % BAU) 56,2-58,2 – proteine; 34,3-36,1 – carbohidraţi; 2,4-5,3 lipide şi 3,4-4,3 cenuşă în funcţie de ciclul de fermentare după care a fost prelevată. Biomasa conţine cantităţi semnificative de aminoacizi esenţiali şi imunoactivi, o gamă largă de macro- (K, P, Na, Mg, Ca) şi microelemente (Fe, Zn, Cr, Se, Mo, Mn, Cu) şi practic nu conţine metale grele (Pb, Ba, Hg, Li, Bi, Sb, Sr), fapt ce o poziţionează ca o sursă bogată şi inofensivă de substanţe biologic active pentru obţinerea biopreparatelor cu utilizare în diferite domenii. |

The yeast biomass had a varied biochemical composition and contained (in % DW) 56,2-58,2% of proteins; 34,3-36,1% of carbohydrates; 2,4-5,3% of lipids and 3,4-4,3% of ashes, depending on the fermentation cycle. The biomass contained significant amounts of the essential and immunoactive aminoacids, a wide range of macro- (K, P, Na, Mg, Ca) and microelements (Fe, Zn, Cr, Se, Mo, Mn, Cu), and had virtually no heavy metals (Pb, Ba, Hg, Li, Bi, Sb, Sr). Therefore, it can be used as a a rich and harmless source of biologically active substances for obtaining various biological products to be used in various fields. 28 references, 1 figure, 2 tables.</p></cfAbstr> <cfAbstr cfLangCode='RU' cfTrans='o'><p>В статье представлены данные о биохимическом составе дрожжей из отходов пивоварения, оставшихся после различных циклов ферментации. Установлено, что биомасса дрожжей имеет разнообразный биохимический состав и содержит (в % СВ) 56,2–58,2% белков; 34,3–36,1% углеводов; 2,4-5,3% липидов и 3,4-4,3% золы, в зависимости от цикла ферментации, после которого она была взята. Биомасса содержит значительное количество незаменимых и иммуноактивных аминокислот, широкий спектр макро- (K, P, Na, Mg, Ca) и микроэлементов (Fe, Zn, Cr, Se, Mo, Mn, Cu) и практически не содержит тяжёлых металлов (Pb, Ba, Hg, Li, Bi, Sb, Sr), что позиционирует её как богатый и безвредный источник биологически активных веществ для получения различных биопрепаратов и их использования в различных областях.
