Rezumat

Nowadays, the complex processing of raw materials, the complete extraction of important components, and the rational management of wastes represent an important issue that needs to be solved. Thus, a special attention should be given to the use of secondary raw materials, namely tomato wastes, industrially acquired at the manufacture of tomato products: tomato juice, tomato paste, broth, tomato sauce, ketchup, concentrated tomato sauce, peeled tomatoes, etc. Tomato wastes could be successfully used to obtain lipophilic extracts rich in biologically active compounds, and tomato meals with an increased content of protein and dietary fiber. The efficiency of the extraction process depends on the following factors: moisture and fat content of the raw material, its grinding degree, temperature, pressure and duration of the extraction process, the flow rate of carbon dioxide.
