Rezumat

Due to its complex chemical composition and, in particular, high inulin content, Jerusalem artichoke can be used as a raw material in functional products for people with diabetes [6]. According to the World Health Organization, diabetes ranks third in the world, after cardiovascular disease and cancer. In 2017, 104,749 people were diagnosed with diabetes, compared to 96,651 in 2016, of which 428 and 397 children, respectively, increasing both the prevalence and the incidence. Thus, in 2015, 2016 and 2017 the prevalence was 254.3, 273.2 and 295.1 cases of diabetes per 10 thousand inhabitants and the incidence of 29.2, 30.1 and 30.22 cases per 10 thousand inhabitants. Diabetes killed 400 people in 2017, compared to 410 in 2016 [13,14]. Because inulin is a fructan, hardly soluble in cold water, but slightly soluble in hot water, the main occupation of several studies was to determine optimal conditions for the extraction of inulin, but also the content of amino acids such as arginine, valine, histidine, isoleucine, leucine, lysine, tryptophan, phenylalanine [2].
