Food-borne infections - major problem of public health - are triggered by the ingestion of food or water contaminated with microorganisms or their toxins. The defi nition of food-borne infections is still under debate, most of the diseases spread by food or water being classifi ed as food-borne infections. Ingestion of contaminated food is the starting point for infection, disease occurring if the microbes multiply in food or produce signifi cant amount of toxins. Salmonella are pathogen through virulence and toxigenicity. Salmonella virulence is due to their capacity to bind, multiply and invade intestinal wall, while toxigenicity is due to exotoxins and endotoxins. There is no specifi c prophylaxis for enteric salmonellosis, prevention being based on hygiene measures and interception of ways of transmission. In Salmonella gastroenteritis, throughout the disease, during convalescence or in carriers, the etiologic agent is isolated from stool samples. Enrichment media are mandatory for Salmonella isolation. Molecular methods are based on DNA plasmid characterization or on identifi cation of small heterogenicity regions in the bacterial chromosome. |
