It was conducted a research in the use of chitosan in settling wort. In this way was determined the dose by treating the wine with chitosan, which is 0.5 to 1.0 g / dm3. The results of research proved that chitosan used for settling allows to obtain perfectly clarifi ed musts, the treatment does not adversely aff ect the fermentation process and greatly improved organoleptic qualities of wines. |
