Were selected starins of Streptococcus thermophilus and Lactobacillus bulgaricus and created a simbiotic culture for fermentation of goat milk. As a result of research found that szmbiotic culture developed activelz fermenting goat milk and yogurt quality obtained with the technical condition given product. The data obtained demonstrates that symbiotically culture developed consisting of autochthonous stains of therrmophilic lactic acid bacteria can be successfully used in the manufacture of goat milk yogurt, which is a useful body and preferably both children and adults as well. |
