It has been studied the dynamics of the particular compounds with antioxidant properties, during the preparation of wine and other products from the red grape varieties, which are cultivated in Moldova. Have been examined more than 130 samples of red wines, produced by diff erent technologies from the grape Merlot, Cabernet-Sauvignon and Kodrinsky. We have obtained the data on the dynamics of coloring substances, rutin, quercetin, resveratrol, ascorbic and gallic acids, indicator of antioxidant activity, during the processing of wine with various fi ning substances and when wine is stored during the year, as well as in the preparation of concentrated and sulfi ted wort. |
