Rezumat

The work was carried out to compare diff erent clarifi cation, stabilization schemes and their infl uence on the chromatic characteristics and parameters of raw material for rose sparkling wine. On the base of the study the optimal schemes of clarifi cation and stabilization of raw material for rose sparkling wine was researched. Chromatic indices were determined to characterize the composition and quality of raw material for rose sparkling wine.
